Because a couple of people have been asking about my "Infamous Three-Meat Chicken", I offer you the recipe. Easy as can be, and can be prepared either low-fat or full-fat.

CB's Three-Meat Chicken

3-4 Boneless, skinless chicken breasts, halved (6-8 pieces)
1 package pre-cooked bacon (*The original recipe calls for uncooked bacon, but I didn't like the uncooked feeling of it in my mouth, so I switched to pre-cooked)
1 jar (or package) dried or chipped beef
1 bottle of good Pinot Noir, or your favorite wine.
1 jar or 2 cans mushrooms, drained
2 small cans fat-free Cream of Mushroom soup
1 pint low-fat sour cream
1 cup of milk

1.Cover bottom of 8X12 baking pan with dried/chipped beef.
2.Pour yourself a glass of wine
3.Wrap each chicken breast in 2 pieces of pre-cooked bacon and arrange on layer of dried/chipped beef.
4.Get another glass of wine.
5.Mix Mushroom soup, mushrooms, sour cream and 1 cup of milk together, then pour over pre-wrapped chicken boobies. You had to know I couldn't resist.
6.Bake uncovered for 2 hours at 350 degrees while you finish off the bottle of wine.

**keep in mind the dried/chipped beef is salty, so I don't add any extra salt. You can addd spices as you like-the three meat flavors complement each other and the soup mixture is divine. I serve it with rice or mashed potatoes (the soup mixture makes a great gravy)and it re-heats beautifully.
